General Cooking Tips
- Use buffalo in any recipe that calls for beef. Buffalo can be seasoned the same way as beef and cooked using the same methods. However, caution must be used to make certain that the buffalo is not over-cooked.
- To broil buffalo, set the broiler rack a notch lower than for broiling beef. Buffalo will cook much faster, so keep an eye on it! Try sprinkling lemon juice, garlic powder, or salt and pepper on your favorite steak.
- For an oven roast, set the thermostat at 275º. Baste with your favorite marinade. The roast will be done in the same amount of time that beef would be at higher temperatures. A meat thermometer is useful. Cook your roast to a temperature of 170º (medium).
- For a pot roast use an oven bag or cook it in foil. Pot roasts are also excellent in a crockpot or in an oven at 175º for the entire day. When cooking with moisture the roast can be cooked to the well-done stage.
- Stews are also great in crockpots and slow cookers. Use your favorite recipe and cook until the meat is tender.
- To cook burgers, leave the patties partially frozen, then cook until the juices start to bubble. Flip the burger and brown the other side. Do not cook until the meat is well done.
